Paleo Fried Plantains

I hope everyone is having a relaxing Sunday. Today I wanted to share with you an easy dessert recipe that just happens to also be paleo compliant.

Fried Plantains

For this recipe I used only one large plantain. If you use more than one plantain, adjust the recipe accordingly.


Ingredients:

1 ripe plantain
2 TBS coconut oil
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tps ground clove

Remember you can adjust this recipe to suit your personal taste.

All I did was cut up the plantains diagonally. Warmed up about 2 tablespoons or so of coconut oil in a pan. I had the burner on a low medium heat.  Mixed it up all the spices. I put the spice mixture on a plate.  Then dunk the plantains in the mixture. I probably cooked each side about 3 – 5 minutes. I didn’t want the spices to burn. It was pretty darn simple.

I’ve seen recipes that added honey to this. I’m sure that is delicious. At the time I made these, I was doing a very strict paleo regime, so no added sugar was allowed. The plantains were sweet enough anyways. The plantains almost have a mango type taste to it. It was  really good.

I hope you all try this simple recipe out one day! Healthy and delicious. Can’t beat that.
